Tonight I made Monte Cristo sandwiches that immediately reminded Rick, Ryan and I of the Monte Cristo sandwiches made at the Blue Bayou near the Pirates of the Caribbean at Disneyland. In just four weeks on December 20, we will be there eating lunch as a family celebrating Jenessa's homecoming at "the happiest place on earth". The only person that could make this adventure even better would be to have Cameron with us. However, he continues to do well at the John Volken Academy and we are very proud of him for his commitment to his program that provides a way for him to be happy whether in Anaheim or BC now and in the future. I am grateful for family adventures, memories, encouragement and love.
I am reminded by Rick's sister Gayla that Grandma Hoffman whom we affectionately called Honey made the Monte Cristo sandwiches when they were little. I was given this recipe from Honey a long time ago so making these delicious sandwiches is definitely a tradition.
